Emmentaler AOC
Classic :
A light nutty taste, aged 4 to 8 months.
Emmentaler AOC Reserve :
After 4 months of aging, the best cheeses are
selected for Emmentaler AOC Reserve aging. These
cheeses are given extremely attentive care in
the cellars. A minimum of 8 months of aging
gives this cheese a slightly more pronounced
taste than that of the Emmentaler AOC Classic.
Emmentaler AOC des Grottes or “Höhlengereiften”:
After 12 months’ aging, of which 6 are spent in
the grotto cellars dug in molasse (soft
sandstone), it is recognized by the marbled
black-brown sheen of its crust, naturally
created by its lengthy exposure to humid (94%),
cool (12°C) and particularly mineralized air of
the grotto…and by the great care given to it by
master cheesemakers. This Emmentaler AOC has a
distinct nutty aroma and a surprising softness.
Emmentaler AOC Bio:
It is particularly mild with an exquisite nutty
taste, aged a minimum of 4 months.
